Having enjoyed his time as a surf instructor for 2 years, Lewis moved to Kingsbridge, Devon in 2015. It was in this quaint, seaside town that Koto was born.

Lewis, the master-mind behind Koto, is pioneering the sushi train in the South Hams. Based in a small, functional kitchen just off Forestreet - above the Mayne Art Gallery - he prepares and creates fresh, made-to-order Sushi. Think light, healthy and bursting with flavour.
From deliciously salty edamame beans to vibrant salmon poke bowls, Koto fuses Japanese inspired flavours with locally sourced ingredients to offer an innovative, fresh menu.
Lewis began his food career at the age of 19, and his passion for flavour bloomed. He soon became tired of the corporate world, and with an eco-friendly, pro-community approach, Lewis worked extremely hard to develop his culinary skills and set up his own business. As a local independent, Koto is flexible and dedicated; the menu is constantly developing and flows with the seasons.
Whilst the focus is on the flavours, colours and freshness of each dish, Koto fully supports the plastic-free, zero-waste movement using minimal packaging and local, seasonal produce.
Lewis is impressively passionate about experimenting with the tastes of Koto. As a natural chef, he effortlessly fuses traditional flavours with his own distinctive style to produce the ultimate sushi; think horseradish wasabi. Each dish is prepared 'the morning of' and is designed to be eaten that same day for ultimate freshness. Lewis also offers catering services!
Whilst the dream for Koto is a stylish Sushi Bar and one-of-a-kind Cookery School, you can currently find Koto at many local retailers such as Pretty Local and The Pantry, as well as in Bantham and Salcombe.
